Gorwydd Caerphilly

Gorwydd Caerphilly is made by the Trethowan brothers in Somerset, having moved with them from Wales in 2014. Beneath the natural rind is a wonderfully contrasting cheese: firmer and earthier towards the outside, with a fresh, lemony, almost yoghurt-like centre. That contrast is exactly why I love it. It is a brilliant lesson in how rind, moisture and maturation can create several textures in a single slice.
