Gorgonzola

Gorgonzola PDO is a cow’s-milk blue from northern Italy, made principally in Lombardy and Piedmont. Dolce is softer, sweeter and creamier; Piccante is firmer and more assertive, with a sharper blue bite. That distinction matters enormously when you are pairing or cooking with it. I love Dolce with something bitter or fresh, while Piccante can stand up to much bigger flavours.
