Fourme d'Ambert

One of France's oldest cheeses, a tall cylinder of cow's milk blue from the Auvergne. It is milder and creamier than most blues, with a gentle, sweet, nutty flavour and a soft, moist paste. It is the blue I recommend to people who think they don't like blue cheese. Serve it with a sweet wine or fresh pears.
