A square, bloomy sheep's milk cheese from Golden Cross Cheese Company in East Sussex. When young, the centre is dense and lemony; as it ripens, it softens from the rind inwards and develops a sweet, mushroomy richness. Sheep's milk makes it lighter and more delicate than a cow's milk Brie. One of my favourite English soft cheeses.
