Époisses

Époisses is Burgundy’s famous washed-rind cheese, traditionally washed with brine and Marc de Bourgogne as it matures. Its orange, sticky rind can smell formidable, but the interior is soft, glossy and remarkably elegant, with savoury, meaty and fermented notes around a rich creamy centre. It is a perfect example of my favourite washed-rind trick: the aroma enters the room before the flavour does.
