Washed rind from Co. Cork, Ireland
A washed-rind cheese from West Cork, made from raw cow's milk. The rind is pink-orange and gently sticky, the paste supple and creamy, the flavour savoury, fruity and earthy. One of the cheeses that built Ireland's farmhouse cheese revival.
