Dorset Blue Vinny

A revived West Country blue made at Woodbridge Farm in Dorset from skimmed milk, which gives it a drier, crumblier texture than richer blues. The name is said to come from vinew, an old word for mould. The flavour is sharp, tangy and savoury. Crumble it over a salad or eat it with a Dorset knob biscuit.
