Crottin de Chavignol

A small goat's cheese from the Sancerre wine region. Young, it is moist, fresh and tangy; aged, it becomes hard, nutty and intensely flavoured. It is famously grilled on toast and served on a salad, and nothing goes better with it than a glass of Sancerre from the same hills.
