Coulommiers

A smaller, thicker cousin of Brie from the Seine-et-Marne, east of Paris. Its size means it ripens differently: the centre stays a little firmer and the flavour milder, milky and buttery, with a gentle mushroomy note from the rind. A lovely whole cheese to put on the table for four to six people.
