Cornish Yarg

Cornish Yarg is made by Lynher Dairies and wrapped by hand in nettle leaves, which form its distinctive patterned rind as the cheese matures. Inside, the paste is supple and gently crumbly, with fresh, lactic flavours becoming more mushroomy and savoury towards the rind. It is instantly recognisable on a counter, but importantly the nettles are not a gimmick: they are part of the way the rind develops.
