Colston Bassett Stilton

Colston Bassett is one of the classic names of Blue Stilton, made in Nottinghamshire. The paste is rich and creamy yet beautifully structured, threaded with blue veining that brings savoury spice rather than simply salt or aggression. For me, great Stilton should have balance: richness, blue character, sweetness and length. Colston Bassett is a wonderful example of why this remains one of Britain’s defining cheeses.
