From the Aube in southern Champagne, Chaource is a tall, bloomy cheese with two textures: a creamy layer beneath the rind and a dense, moist, lactic core. The flavour is fresh, mushroomy and slightly tangy. It is made in Champagne country, and a glass of Champagne is its best partner.
