Cashel Blue

Cashel Blue is a farmhouse cow’s-milk blue from County Tipperary and one of the cheeses that helped define modern Irish farmhouse cheesemaking. It is creamy and mellow when young, becoming more savoury and assertive as it matures. I love its balance: enough blue character to satisfy a committed blue-cheese eater, but a soft, buttery generosity that makes it a very persuasive introduction to the style.
