Hard from Auvergne, France
One of France's oldest cheeses, from the Auvergne. Its curd is pressed and milled, a little like Cheddar. Jeune is mild and milky; entre-deux is nuttier; vieux is sharp, savoury and crumbly. A versatile cheese with a long history.
