Fresh whey cheese from Corsica, France
Corsica's fresh whey cheese, made from sheep's or goat's milk. Fresh, it is light, soft and milky, like a delicate ricotta; aged, it becomes firmer and more savoury. It is used in fiadone, the Corsican cheesecake.
