Soft, bloomy from Île-de-France, France

The older and more rustic cousin of Brie de Meaux, made from raw milk and ripened for longer. Brie de Melun is smaller, saltier and more intense, with a darker, speckled rind and a dense, pungent paste. It is Brie for people who like their cheese with character.
