Brie de Meaux

Brie de Meaux is one of France’s great protected cheeses, a large raw cow’s-milk Brie from the Île-de-France tradition. When properly ripe, the paste softens from the rind inwards and develops extraordinary mushroom, cultured cream, brassica and savoury notes. I always say Brie should taste of something. A good Brie de Meaux is not simply creamy: it is earthy, complex and gloriously alive.
