Brefu Bach
Soft from Gwynedd, Wales
A small sheep's milk cheese from Cosyn Cymru in north Wales. The name means 'little bleat'. The paste is soft, light and lactic, the flavour fresh, sweet and delicate, with a gentle creaminess under a thin rind.
