Bleu des Causses

The cow's milk cousin of Roquefort, from the limestone plateaux of the Aveyron, where it is aged in natural caves ventilated by fissures in the rock. It is creamy and moist, with a bold but rounded blue flavour, less salty and sharp than Roquefort, and a lingering peppery finish. An underrated cheese that deserves more attention.
