Berner Alpkäse
Hard, Alpine from Bern, Switzerland
A raw milk cheese made in summer on the Alpine pastures of the Bernese Oberland. Made in copper cauldrons over wood fires, it ages into a hard, crystalline cheese with a flavour of browned butter, hazelnut and dried Alpine herbs.
