Berkswell

Berkswell is one of Britain’s great sheep’s-milk cheeses, made at Ram Hall in the West Midlands. The wheels are firm and rustic, with a natural rind and a flavour that can move from sweet and nutty to savoury, fruity and almost caramel-like with age. I particularly love the texture: dense enough to grate or shave, but still giving that rich, rounded sweetness that good sheep’s milk brings.
