Beenleigh Blue

One of the great English sheep's milk blues, made in Devon by the Ticklemore Cheese Dairy. Sheep's milk gives it a sweet, fudgy richness that sits beautifully against a sharp, mineral blue tang, and the texture is moist and slightly crumbly. It is seasonal and made in small quantities, so when it's good, I push it hard.
