Beauvale
Blue (soft) from Nottinghamshire, England
A soft, creamy blue made by Cropwell Bishop Creamery in Nottinghamshire, inspired by Gorgonzola dolce. The paste is almost spoonable, the blue mild and sweet, with a buttery richness. It is a lovely contrast to their Stilton, and a brilliant blue for cooking: stir it into risotto or melt it over gnocchi.
