Beaufort

One of the great Alpine cheeses, made in Savoie from raw milk. Its wheels have a distinctive concave edge, shaped by the beechwood hoops they are pressed in. Beaufort d'été, made from summer pasture milk, is the most prized. The paste is firm and smooth, the flavour buttery and nutty, with floral and savoury notes. The 'Prince of Gruyères', and rightly so.
