Made by the Bath Soft Cheese Company at Park Farm near Bath, from their own organic milk, following an old-fashioned Stilton-style recipe. It won Supreme Champion at the World Cheese Awards in 2014. Expect a creamy, open texture and a balanced blue: rich and savoury, with sweetness underneath and none of the harshness that lesser blues can have.
