Barkham Blue

Made by Two Hoots Cheese in Berkshire from Channel Island milk, which gives it a buttery richness and a golden paste. It is shaped like an ammonite, with a dark, rustic natural rind. Inside, the texture is moist and creamy and the blue is well behaved: savoury and rounded rather than aggressive. One of the most elegant modern English blues.
