Banon

From Provence, Banon is a small goat's cheese traditionally wrapped in chestnut leaves and tied with raffia. The leaves slow the ripening and give the cheese a subtle, earthy, woody flavour. Inside, the paste is soft, creamy and gently tangy. Unwrap it at the table: it is as much a moment as a cheese.
