A goat's cheese shaped as a pyramid and coated in ash, which neutralises acidity at the surface and helps the rind develop. The paste is dense and lactic at the centre, turning soft and creamy just under the rind. The flavour is fresh, citrusy and clean. Cut it in wedges from the top so everyone gets rind and centre.
