Appleby's Smoked Cheshire

Appleby's raw milk, clothbound Cheshire, gently smoked. The smoke sits over the cheese rather than burying it, so you still get Cheshire's crumbly, moist texture and bright, mineral tang underneath. Made by the Appleby family at Hawkstone Abbey Farm in Shropshire, it is one of the few smoked cheeses I stock without hesitation, because the cheese itself was worth eating first.
