Appleby's Cheshire

Appleby’s is a traditional raw-milk Cheshire made at Hawkstone Abbey Farm in Shropshire, despite the cheese style carrying the Cheshire name. It is crumbly and open-textured, with a clean, mineral, slightly salty tang that makes it incredibly refreshing for a territorial cheese. This is one I love for its honesty: no showiness, just a beautiful old British style made with real clarity.
