From the Appenzell region of Switzerland, this cheese is regularly washed with a herbal brine whose recipe is a closely guarded secret. The result is a firm, supple paste and a spicy, fruity, savoury flavour with a distinctive tang. It is one of the most aromatic Swiss cheeses and excellent melted.
