This supple, square, washed rind cheese is a lighter, cloudier orange than its vibrant, smellier and stronger cousins such as Epoisses. It is more gently washed in less harsh alcohol. It has a bouncy texture punctuated by small holes and a smooth rich buttery flavour with a hint of sweet pastures.
