Roquefort Troupeau is the best, and one of the only Roqueforts that is still hand-made to traditional methods in caves in the Rouergue region. It has a wet, soft crumbly texture and a smooth richness, with a tart carmelised onion after taste. Superb! All Roqueforts are star graded and this one, the only one we sell at Cheeses, has the highest grade of five stars.
