Our farmhouse Gruyere has a hard, grainy consistency that gives way to a robust, nutty yet surprisingly creamy quality. At first the flavour seems fruity but after a while stronger nuttier layers are revealed. It is a must for Fondues on a cold winters evening and can be used in many different recipes.
